Super exciting seeing our Santa-Maria grill on display and in use with Peddlers Creek! Meat smoking is on the rise in the Maritimes — and live-fire cooking is right there with it. Watching one of our hand-built grills earn its keep at a real working kitchen is exactly why we do this.
What makes a Santa Maria grill special
The Santa Maria is one of the oldest and most honest ways to cook: an open hearth of hardwood or charcoal with a heavy grate that cranks up and down over the coals. Raise the grate to gently smoke and finish; drop it low for a hard, fast sear. There's no propane and no shortcuts — just fire, steel, and the cook's hands controlling the heat. That direct, adjustable live fire is what gives Santa Maria–style cooking its signature crust and smoke-kissed flavour.
From our shop to a working kitchen
This particular grill got a full R&R makeover before heading out — refinished wood, a fresh coat of paint, the added drain bucket, and a set of custom wheels for better mobility. Seeing it cooking for guests at Peddlers Creek is the best kind of feedback a builder can get: a smoker that's not sitting in a showroom, but feeding people, night after night.
If you run a restaurant, a food truck, or host community events, a Santa Maria grill brings a show-stopping live-fire centrepiece that customers can see, smell, and taste. Feel free to reach out to discuss bringing the R&R experience to your kitchen — every build is made to your spec and built to last.
